Restaurant Manager (Fahrenheit Grill)

We now wish to recruit an experienced Restaurant Manager whom will be responsible for the management of our Restaurant, Fahrenheit Grill:

Duties and Responsibilities:

To ensure the smooth and efficient operation of Fahrenheit Grill
To ensure the highest level of standard of service and cleanliness are maintained at all times
To achieve high levels of customer satisfaction and feedback
To work closely with the Executive Head Chef and Kitchen Team
Management, training and development of the Restaurant Team
To achieve finance targets in relation to sales and costs (including payroll)
Duty Management shifts as required

The Person

Previous experience at Restaurant Management level in a 4* hotel Restaurant or similar
A hotel/restaurant management qualification would be desirable but not essential
Excellent attention to detail and a customer focused individual
Excellent people management skills

Duty Manager

 
Reporting to the Deputy General Manager duties will include:

  • To ensure that the operation in all areas is running to the agreed standard and follow up any discrepancies with the relevant HOD’s.
  • To assist in the daily operation of all departments when required
  • To be operationally responsible for the service delivery and standards throughout the entire building when on Duty.
  • To patrol the building ensuring that all fire exits are free from obstruction and in proper working order.
  • To be present around the building at all times during the day. In particular, the Duty Manager must maintain a lobby presence between the peak check in/out times, during lunchtime in around the lobby and restaurant and around the banqueting area during the peak tea/coffee times.
  • To conduct show arounds as required.
  • To ensure that the highest level of cleanliness is upheld in all areas of responsibility.
  • Is highly visible and interfaces with customers on a regular basis to obtain feedback on quality of product, service levels and overall satisfaction, effectively responds to guest problems and complaints.
  • To compile the Duty Management Gameplan and review and update it as required.
  • To be operationally responsible for the service delivery and standards throughout the entire building when on Duty.
  • Ensure that all signage throughout the building is up to date, in the correct standard and professionally displayed.
  • Patrol the building at regular intervals paying particular attention to cleanliness, both inside and outside the building.
  • To take control and lead the team in the event of a fire alarm or pre alarm scenario.
  • Ensure that all appropriate action is taken and followed up on any guest feedback.
  • Deliver daily team briefings where required.
  • Ensure that a comprehensive handover system is put in place to inform the Manager on Duty of all the VIP’s, Complaints, Special Requests, Function Business and AOB.
  • To control the issuing of keys to team members.
  • To look after requisitions outside of store hours ensuring that all documentation is completed
  • To spot check guest bedrooms on a daily basis.
  • To handle all complaints in a calm, organised and discreet manner ensuring complete service recovery every time.
  • To get involved in and carry out training in the hotel.
  • To complete all projects within the required timeframe as directed by the Deputy General Manager or General Manager
  • To ensure that all necessary Duty Management documentation is compiled, recorded and stored.
  • The Duty Manager will police this system to ensure that all HOD’s covering DM shifts are trained and comply with the agreed operating procedures.

 

The Candidate

  • Previous experience at Duty Manager or HOD level in a 4 / 5* hotel
  • Standards focused with high attention to detail
  • Professional individual with excellent communication skills
  • Must have permission to work in Ireland on a full time basis

Main Purpose of the Job:

Responsibility for all food preparation, production and service in our restaurant Fahrenheit Grill. To assist with conference, banqueting and bars kitchens if required.

Duties and Responsibilities:

  • In conjunction with the Executive Head Chef, to ensure the consistent smooth running of food service in Fahrenheit Grill
  • Maintain a high level of food quality which will exceed guest’s expectations
  • Compilation of menus in accordance with the Executive Head Chef
  • Management of the restaurant kitchen team
  • To ensure effective stock control
  • To ensure that cleanliness and food safety is adhere at all times

The candidate:

  • Previous experience at Junior Sous Chef level in a 4/5* hotel
  • Hotel restaurant kitchen experience is highly desirable
  • Passion for producing high quality food and service
  • HACCP or food safety management qualification

  • To deliver at all times the highest quality of beverage and food service and customer service and care that is demanded of Clontarf Castle Hotel
  • To strive at all times to exceed the expectations of all customers within the hotel and to do so in a pleasant and efficient manner in accordance with the established standards in the hotel
  • To adhere to all Health & Safety, Hygiene and Cashiering Procedures
  • To maximise sales and revenue in the F&B outlets at all times
  • To handle customer queries and complaints in a professional, efficient manner

Experience/Education:

  • Previous experience working in a busy hotel F&B (Bars/Restaurant) outlet is essential
  • Strong communication, interpersonal and organisational skills essential as is the ability to work as part of a team and on one's own initiative
  • Strong Customer Focus essential
  • Permission to work in Ireland on a full time basis

Conference and Banqueting Porter

The Conference and Banqueting Porter duties will include:

  • To set and maintain conference/ banqueting rooms
  • To assist conference organisers with the movement of luggage and equipment to and from the conference rooms
  • To assist customers who need assistance with any information that they require
  • To deep clean the rooms on a monthly basis
  • To maintain the Viking Lobby
  • To follow all procedures when escorting guests to and from the outlets. This will involve explaining the outlets to customers and the facilities in the conference rooms
  • To maintain the porters storeroom in a neat, safe and professional working order
  • To serve tea/coffee to all meeting rooms on time and in accordance with the standards of the hotel
  • To ensure that a presence is maintained at all times during the tea/coffee breaks
  • To assist guests with any requests that they may have
  • This involves going that “Extra Mile” to ensure guest satisfaction
  • To report any suspicious behaviour to security
  • To provide support in other areas of the hotel if required to do so
  • To ensure that any extra tea/coffees given to meetings are charged for
